Title: Miss Pearl's Tomato-Papaya-Macadamia Nut Sals

6 | Tomaotes, blanched, peeled, | |
Seeded, and chopped | ||
1 | Papaya, peeled, seeded, and | |
Diced | ||
1/2 | Red Onion, diced | |
1/4 | c | Macadamia Nuts, toasted and |
Chopped | ||
2 | tb | Mint, chopped |
1 | tb | Cilantro, chopped |
1/4 | c | Fresh Lime juice |
1/4 | c | Olive Oil |
Salt and Pepper |
Combine all ingredients, and adjust seasonings to taste. Best served with grilled fish or chicken.
