Title: Top of the Stove Casserole

Yield: 4 Servings
12 | oz | Ground turkey |
1 | lg | Clove garlic, minced |
1/2 | c | Sliced onion |
1/2 | c | Diced green pepper |
1 | c | Dried zucchini |
1 | c | Canned, ready cut tomatoes |
2 | c | Chicken stock |
1 1/3 | c | Uncooked noodles |
1/2 | ts | Poultry seasoning |
Salt and pepper to taste | ||
Parsley (to garnish) |
1. In large non-stick skillet coated with non-stick spray, saute turkey, garlic, onion, and green pepper until turkey is no longer pink.
2. Add zucchini and saute 2 minutes.
3. Add tomatoes, stock , noodles and poultry seasoning.
4. Cover and simmer 10 to 12 minutes, or until noodles are cooked.
5. Season to taste with salt and pepper.
6. Garnish with parsley.
