6 | md | Potatoes, cooked, peeled and diced |
3/4 | c | Butter, melted and divided |
2 | oz | Jar chopped pimientos, drained |
1/2 | c | Chopped green pepper |
1 | c | Evaporated milk |
1 1/2 | ts | Salt |
1/4 | ts | Pepper |
3/4 | c | Shredded cheddar cheese |
24 | | Saltine crackers, crushed |
In a large bowl, combine potatoes, 1/2 cup butter, pimientos, green pepper,
milk, salt, pepper and cheese. Mix thoroughly. Transfer to a greased
13"x9"x2" baking dish. Sprinkle with crackers. Drizzle with remaining
butter. Bake at 350øF for 45 minutes.
