Title: Black Bean Chili Rice

1 1/2lbLean ground beef or turkey
1smOnion chopped
1 Clove garlic, pressed
1tbChili powder
2cnWhole tomatoes with green chiles
15ozTomato sauce
1cnBlack beans drained
1cWater
7ozInstant long-grain rice, uncooked
  Toppings: sour cream, shredded Colby, Monterey Jack blend

Cook first 4 ingredients in a large skillet over medium-high heat until meat is browned, stirring until it crumbles. Stir in tomatoes and next 3 ingredients.

Bring to boil; reduce heat, and let stand 5 minutes. Serve with desired toppings.
