Title: Black Bean Chili Rice

1 1/2 | lb | Lean ground beef or turkey |
1 | sm | Onion chopped |
1 | Clove garlic, pressed | |
1 | tb | Chili powder |
2 | cn | Whole tomatoes with green chiles |
15 | oz | Tomato sauce |
1 | cn | Black beans drained |
1 | c | Water |
7 | oz | Instant long-grain rice, uncooked |
Toppings: sour cream, shredded Colby, Monterey Jack blend |
Cook first 4 ingredients in a large skillet over medium-high heat until meat is browned, stirring until it crumbles. Stir in tomatoes and next 3 ingredients.
Bring to boil; reduce heat, and let stand 5 minutes. Serve with desired toppings.
