Title: Ma Parker's Boardinghouse Cornbread Stuffing

4 | ts | Margarine |
1 | c | Celery; finely diced |
1/2 | c | Onion; diced |
1/2 | c | Green pepper; diced |
4 | c | Cornbread; crumbled |
2 | c | Crumbled biscuit or toast crumbs |
2 | ts | Dried sage |
3 | Eggs; hard boiled; chopped | |
2 | c | To 4 cups turkey or chicken broth |

Grease a 3-qt. dish. In a lg. heavy skillet melt the margarine over med. heat. Saute the celery, onion, and green pepper until tender. Combine the cornbread, biscuits, and sage, and add to the skillet. Add the chopped eggs. Pour in 2 or more cups of broth, until moistened to taste. Add salt and pepper to taste. Spoon the stuffing into the prepared dish. For moist stuffing, cover and bake in a 350~ oven for 40 mins. For crusty stuffing, cover and bake for 20 mins., uncover and bake for 20 mins. more.
