Cover the bottom of a 13-in. x 9-in. x 2-in. glass dish with dressing. Arrange broccoli an a tree shape, using the stem as the trunk. Place cauliflower around tree. Add tomatoes and carrot slices as ornaments. Diabetic Exchanges: One serving (prepared with low-fat dressing) equals 1 vegetable; also 37 calories, 102 mg sodium, 0 cholesterol, 4 gm carbohydrte, 2 gm protein, 2 gm fat.
