Title: Broccoli Cheese Soup

Yield: 2 Quarts

1 1/2cChopped onion
1/2cButter or margarine
3/4cFlour
10 1/2cnCondensed chicken broth, undiluted
1qtMilk
2cSliced carrots, parboiled
1cSliced celery, parboiled
2cBroccoli florets, parboiled
1/2lbProcess american cheese, cut into cubes

In a large saucepan, saute onion in butter. Add flour and stir to make a smooth paste. Gradually add chicken broth and milk. Cook until mixture thickens, about 8 to 10 minutes. Add carrots, celery and broccoli. Heat through. Add cheese. Heat until cheese is melted and vegetables are tender. Serves 6 to 8.
