Title: Basil-Ricotta Sauce

15 | oz | Part skimmed ricotta cheese |
1/2 | c | Fresh chopped basil |
1/2 | c | Sliced green onions |
1/2 | c | Roasted red peppers, diced |
1/4 | c | Parmesan cheese |
1/4 | c | Chicken broth |
2 | tb | Olive oil |
2 | tb | White wine |
2 | Cloves garlic, minced |
Combine all ingredients in a large bowl. Season to taste with salt and pepper. Makes about 3 cups of sauce, enough for about 1 lb. (dry weight) of tubular pasta.
