3 | tb | Rice vinegar |
1 1/2 | tb | Soy sauce |
1 | tb | Oriental sesame oil |
2 | ts | Minced fresh peeled ginger |
1 | ts | Sugar |
1 | Carrot, shredded | |
1/2 | ts | Chili oil or - 1/4 ts red pepper |
2 | Green onions, sliced thin | |
1/2 | Cucumber, seeded, peeled --- | |
And chopped | ||
1/4 | c | Chopped fresh cilantro |
Whisk all ingredients together in a large bowl. Serve over 12 oz. (dry weight) of japanese noodles. Serve well chilled.
