2 | c | Cooked wild rice |
1/2 | c | Chopped carrots |
1/2 | c | Chopped pecans |
1 | md | Yellow pepper, chopped |
1/2 | c | Raisins |
| | Sherry chive vinaigrette |
| | Lettuce cups, if desired |
VINAIGRETTE |
1/3 | c | Oil |
2 | tb | Sherry |
1 | | Clove garlic |
1 | tb | Chopped parsely |
1/3 | c | Snipped chives |
1/4 | ts | Black pepper |
Combine all ingredients except lettuce cups. Cover and refrigerate four
hours or overnight. Serve in lettuce cups if desired. For the vinaigrette:
combine all ingredients in a food processor and blend until minced.
