Title: Sausage Broccoli Minestrone Soup

Yield: 8 Servings

3tbTo 4 tb Olive Oil
1lbGourmet Sausage (or Chicken Sausage, casing removed)
2cOnion, coarsely chopped
1 Clove Garlic, minced
8cWater ( or defatted chicken stock)
1tsTo 2 ts Salt (optional)
  Freshly Ground Pepper
2 To 3 Fresh Basil Leaves
1pnDried Hot Pepper Flakes
1bnFresh Broccoli, trimmed and cut into small pieces
3cPotatoes, diced
1/2cItalian Parsley

In a large pot add olive oil and set over medium heat. Add sausage and onion and saute' until meat is brown ( about 5 minutes). Add garlic and saute' 1 minute. Add water or stock, salt, black pepper, basil, and pepper flakes. Bring to boil. Cover and simmer about 20 minutes. Add broccoli, potatoes, and parsley and simmer until potatoes are tender. Serves 8
