Title: Cowboy Barbecue Sauce

2 | tb | Bacon grease or vegetable oi |
1 | lg | Onion; finely chopped |
2 | cl | Garlic; minced |
1 | c | Tomato catsup |
1 | c | Chili sauce (bottled) |
1/2 | c | Packed light brown sugar |
1/2 | c | Lemon juice |
2 | tb | Worcestershire sauce |
1 | Hot red pepper sauce; to tas |
1. In a large saucepan, heat the bacon grease over low heat. Add the onion and garlic and cook, stirring, until the onion is softened, about 5 mins. 2. Stir in the catsup, chili sauce, sugar, lemon juice, and Worcestershire sauce. Bring to a simmer and cook, stirring often to prevent sticking, until slightly thickened, about 45 mins. Season with hot sauce to taste. (The sauce can be made up to 5 days ahead, cooled, covered, and refrigerated.)
Makes about 2 cups
