Title: Vanilla Granola

2 | c | Old-fashioned oats |
1/3 | c | Apple juice concentrate - thawed |
2 | tb | Light brown sugar |
1 | tb | Ground cinnamon |
1 | c | Unsweetened flaked coconut |
1 | Vanilla bean - split & seeds removed | |
1 | c | Dried sour cherries |
1 | c | Golden raisins |
Preheat the oven to 300F. In a large bowl, place the first four ingredients, and toss well. Spread the granola onto a large cookie sheet and bake for 25 minutes, stirring occasionally. Stir in the coconut and vanilla seeds, and bake for another 20 to 25 minutes, until lightly browned. Stir in the cherries and raisins. Cool and store in an airtight container for up to 1 month.
