Title: Spicy Sausage Burritos (Jim Stepp)

1/2lbChorizo sausage or ground
1 Beef
1 Mdm potato, peeled and
1 Diced
1/4cChopped onion
4 Eggs, beaten
4 Flour tortillas, warmed (7 -
8 Inch diameter)
4 Leaf lettuce leaves
1/4cShredded monterey jack
1 Cheese
1 Tomato, chopped
1 Avocado, chopped

Remove chorizo sausage from casing. Cook chorizo, potato, and onion in lg frying pan over mdm-low heat 12-15 mins, breaking meat into pieces. Pour off drippings. Pour eggs over meat mixture; cook and stir over mdm heat 2-3 mins, until eggs are cooked.

Line each tortilla with a lettuce leaf. Place an equal amount of meat mixture in each tortilla and sprinkle with an equal amount of cheese. Fold bottom side of tortilla over filling; fold each side of tortilla toward center, overlapping to form pocket. Top with tomato and avocado. Serve immediately.
