1/2 | c | Diced lemon peel |
1/2 | c | Diced dates |
1/2 | c | Golden raisins |
1/4 | c | Brandy or orange juice |
2 | ts | Baking powder |
1/2 | ts | Baking soda |
1 1/2 | c | All-purpose flour |
1/2 | ts | Ground allspice |
1/3 | c | Vegetable oil |
2 | tb | Brown sugar |
2 | | Eggs |
1/2 | c | Chopped pecans |
12 | | Pinneapple chunks |
Combine first 5 ingredients in mixing bowl.Add the rest,except the
pineapple.Mix well.Pour into baking cups,filling each 2/3 full.Top each
with a pineapple chunk.Bake 30-35 min. at 325 degrees F. Cool. yield:12
