1/4 | c | Fat-free mayonnaise |
1/4 | c | Chunky salsa |
1 | lb | Boneless skinless chicken breast |
1 | Red pepper, quartered | |
1 | Yellow pepper, quartered | |
1 | Green pepper, quartered | |
1 | Zucchini, sliced | |
1 | Onion, cut into wedges and skewered | |
Lettuce leaves |
Dressing: Combine mayonnaise with salsa. Cover and chill.
Grill or broil chicken, peppers, zucchini and onion until chicken is done and vegetables are tender. To serve, cut chicken and peppers into strips. Arrange with zucchini and onion on lettuce-lined plates. Serve with dressing.
