Title: Tomatoe Catsup

Yield: 1 Batch
1/2 | Bushel ripe tomatoes | |
4 | Lg. onions | |
8 | Hot red peppers | |
1/2 | c | Pickling spices |
Chop tomatoes, onions, and peppers. Cook until well done, with spices tied in bag. Put through strainer. Let stand overnight. Pour off light water. Continue cookig with 3 tsp. black pepper tied in bag. Add 3 c. sugar, salt, cook until thick again, add 4 tbs. salt, cook until thick again. Add 1 qt. vinegar, cook til thick and seal.. Italian tomatoes work best.
