3 | tb | Quick-dooking tapioca |
1/2 | c | Sugar |
2 | Egg whites | |
2 1/2 | c | Nonfat milk |
1 | ts | Vanilla |
1 1/2 | tb | Grated orange peel |
1 | lg | Orange |
In a large pan, stir together tapioca, sugar, egg whites and milk. Let stand for 5 minutes. Bring to a full boil over medium heat, stirring constantly. Remove from heat and stir in vanilla and orange peel. Let cool, uncovered, stirring once after 20 minutes. Peel orange. Cut segments free and lift out. Layer cooled tapioca and orange segments. Cover and refrigerate until cold.
