Title: Judy Chapman's Sweet Lime Pickles

7 | lb | Cucumbers (14 c.), cut 1/4" |

2 | c | Slaked lime |
2 | ga | Water |
FOR SOLUTION | ||
6 | lb | Sugar |
2 | qt | Vinegar |
1 | ts | Celery seed |
1 | tb | Pickling spice |
2 | ts | Salt |
1 | ts | Whole cloves |
Mix lime and 2 gallons water together, and pour over sliced cukes in granite, stainless steel, or plastic container. Soak about 24 hours. Rinse pickles in fresh water. Cover with fresh cold water, let stand 5 hours. Drain well (3-4 hours).
Mix ingredients for solution together, heat just long enough to dissolve sugar. Pour over well drained cucumber and leave overnight. Then boil 30-40 minutes until pickles begin to look clear. Pack in jars, cover with solution and seal.
