1 | lg | Orange |
1 | md | Head butter lettuce, leaves rinsed and crisped |
1 | sm | Head radicchio or Belgian endive, rinsed and crisped |
1 | c | Raspberries or seedles red grapes, rinsed and drained |
Citrus dressing (recipe follows) | ||

Citrus Dressing: Mix together 1/4 cup orange juice, 2 tb raspberry or red wine vinegar and 1/2 ts honey.
With a sharp knife, cut peel and membrane from orange. Cut beside membrane to release segments. Discard seeds. Break lettuce and radicchio into pieces. Mix. Equally mound leaves on 4 salad plates. Top with orange segments and berries. Add dressing and salt to taste.
