Title: Molded Sweet Cherry Salad

Yield: 2 Servings

2cCherries, sweet; drained and juice reserved
  Water; boiling
3ozGelatin, cherry-flavored
8 Olives, stuffed; chopped
1cAlmonds; toasted, shredded
  Lettuce, crisp
  Mayonnaise

Measure separately the reserved cherry juice and enough boiling water to make 2 cups liquid, but do not combine. Dissolve gelatin in the boiling water; then add cherry juice. Chill until thick and syrupy. fold cherries, chopped olives, and almonds into the slightly thickened gelatin. Pour into 5 cup mold and chill until firm. Unmold on crisp lettuce and garnish with mayonnaise.
