Title: Sicilian Fish Sauce for Pasta

4 | | Scallions chopped fine |
1 | tb | Minced garlic |
1 | tb | Olive oil |
1 | c | Peeled fresh tomatoes chop |
8 | | Fresh basil leaves sliced |
| | Salt, pepper; dash of hot |
| | Sauce is optional |
3 | | Tilapia fillets; cubed or |
| | Any firm sweet non oily fish |
1/2 | lb | Spaghetti cooked |
| | Parmesan cheese |
Saute chopped scallion and garlic in olive oil until translucent. Add
tomatoes, basil and salt and pepper to taste and let cook for about 5
minutes until tomatoes resolve into a sauce. Add fish cubes and simmer on
low until fish is tender. Place cooked pasta with fish sauce in a large
serving bowl and serve with the cheese, crusty bread and a salad.
