Title: Tijuana Meatloaf

1 | c | Milk |
2 | c | Soft bread crumbs |
2 1/2 | lb | Ground beef |
2 | ts | Salt |
1/4 | ts | Pepper |
1/2 | c | Grated carrots |
1/2 | c | Diced carrots (or 3/4 c) |
2 | Eggs, beaten |
In large bowl, pour milk over bread crumbs. Add beef, salt, pepper, carrots, onion and eggs. Mix thoroughly. Pack in 2-quart loaf-style baking dish. Shape like loaf.
Sauce:
1/4 c Ketchup 2 T Brown Sugar 1 T Honey 2 T Prepared mustard
In a small bowl, mix ketchup, brown sugar, honey and mustard. Spread mixture on meatloaf.
Bake 325 degrees for 1-1/2 hours.
