Title: Kay Hartman's Saffron Rice

2 | c | Long grain rice |
3 1/2 | c | Chicken broth |
1/4 | ts | Saffron threads |
Bring chicken broth to a boil over medium high heat. Add the saffron threads along with the rice. Stir slightly, turn the heat down to low, cover, and simmer until broth is absorbed, about 20 minutes. Do not stir or uncover while rice is cooking, as rice cooks in layers and if you stir during the cooking process you'll end up with unevenly cooked rice.
