Title: Spaghetti Salad with Balsamic Dressing

SALAD: | ||
8 | oz | Uncooked spaghetti, broken into thirds |
6 | Green onions, cut into 1/4 inch pieces | |
4 | Italian plum tomatoes, cut in half lengthwise, sliced | |
4 | oz | Mozzarella cheese, diced |
(1 cup ) | ||
DRESSING: | ||
1/4 | c | Olive oil |
1/4 | c | Balsamic vinegar |
1 | ts | Sugar |
1/2 | ts | Dried basil leaves |
1/4 | ts | Salt |
Cook spaghetti to desired doneness as directed on package. Drain; rinse in cold water to cool.
In medium bowl, combine cooked spaghetti and all remaining salad ingredients.
In small bowl, combine all dressing ingredients; blend well. Add to salad; toss to coat. Serve immediately, or cover and refrigerate until serving time. Yield: 8 (3/4-cup) servings. Typed in MMFormat by cjhartlin@msn.com
