Title: Sweet Potato, White Bean, and Orzo Soup

2 | ts | Vegetable oil |
1 | ts | Crushed garlic |
1 | c | Chopped onions |
1/2 | c | Chopped celery |
3 | c | Diced sweet potato |
1/2 | Diced carrot | |
4 | c | Chicken stock |
1 | c | Canned white beans, drained |
1/3 | c | Orzo, or other small pasta |
1 | c | 2% milk |
Chopped parsley |
In a large nonstick saucepan, heat the oil and saute the garlic, onions, and celery until tender, about 4 minutes. Add the potatoes, carrots, and stock. Cover and simmer over medium heat for 20 to 30 minutes or until the potatoes are tender.
Puree all in a food processor until smooth and then return all to the saucepan. Add the beans and pasta. Cover and simmer for 10 minutes, or until the pasta is tender, stirring frequently. Add the mild and reheat. Sprinkle with the parsley and serve. Serves 6.
