Title: Beef and Potato Bake

Yield: 4 Servings
1 | Envelope onion soup mix | |
1 | lb | Lean ground beef |
6 | oz | Can evaporated milk |
1/2 | c | Bread crumbs |
1/2 | ts | Salt |
4 | Potatoes -- thinly sliced | |
1 | ts | Chopped parsley |
1/2 | ts | Salt |
1/2 | ts | Paprika |
1 | c | Shredded cheddar cheese |
Stir soup mix well. Combine 3 tablespoons mix with beef, milk, crumbs and 1/2 teaspoon salt. Mix well. Spread this in bottom of shallow, lightly greased baking dish. Set aside. Combine remaining soup mix with potatoes, parsley and 1/2 teaspoon salt. Arrange potato mixture evenly over meat. Cover. Bake 1 hour until potatoes are tender. Uncover; sprinkle with cheese. Bake 15 minutes longer or until cheese melts. Sprinkle with paprika.
