10 | oz | Frozen chopped broccoli; tha |
1/2 | c | Mild cheddar cheese; shredde |
2 1/2 | oz | Mushrooms; stems & pieces |
8 | | Eggs |
2 | tb | Whole milk |
2 | tb | Green onion; chopped |
1/2 | ts | Dried basil |
1 | ds | Paprika |
1/8 | ts | Salt |
1/8 | ts | Pepper |

on quantities for 4 servings and the use of a standard (500-625 Watt)
microwave oven, adjust as required. Place the broccoli in a shallow
(10"x6") baking dish. Cover with vented plastic wrap. Microwave at HIGH for
4 to 5 minutes. Break the broccoli up with a fork. Recover. Microwave at
HIGH until the broccoli is just tender (2-3 minutes longer). Drain well.
Crack the eggs into a medium size mixing bowl. Add the milk, basil, salt
and pepper. Beat well. Stir in the cheese, mushrooms and green onions. Pour
over the broccoli. Cover loosely. Microwave at MEDIUM-HIGH for 8 to 11
minutes, stirring gently every 4 minutes. Sprinkle with paprika. Let stand,
covered, for 3 minutes. Serve.
