Title: Best: Sun-Dried Tomato Vinaigrette

2 | tb | Sun-dried tomatoes, finely chopped |
2 | tb | Balsamic/red vinegar |
1 | ts | Dijon mustard |
1 | Garlic clove, minced | |
pn | Salt | |
pn | Pepper | |
1/3 | c | Extra-virgin olive oil |
In small bowl, whisk together tomatoes, vinegar, mustard, garlic, salt and pepper; gradually whisk in oil.
Vinaigrette goes particularly well with leafy spring lettuce.
