1/4 | c | Minces onions |
1/4 | c | Butter |
1/4 | c | Flour |
2 | c | Broth |
2 | c | Milk |
1 | | Carrot; sliced very small |
1 | | Celery stalk |
| | Salt & pepper |
| | Oregano leaves |
| | Thyme |
3/4 | c | Grated cheese |
1 | md | Potato peeled & diced |
Melt butter & brown onions lightly over low heat. Add flour stirring
continuously. Add broth & milk or only milk + herbs. Bring to a slow boil,
put in food processor, bring back to stove then slowly add cheese until
cheese melts stirring continuously. Sprinkle with paprika & croutons.
