Title: Deep-Fried Brie with Gooseberry Sauce

Yield: 4 Servings
8 | oz | Brie cheese |
1 | Egg, beaten | |
1/2 | c | Whole wheat dried bread crumbs |
1 | tb | Mixed chopped nuts |
Oil for deep-frying | ||
1 | c | Parsley sprigs |
1 | ts | Salt |
SAUCE | ||
1 1/2 | c | Gooseberries, washed, topped and tailed |
3 | tb | Superfine sugar |
1/2 | ts | Ground ginger |
2 | tb | Water |
Cut the Brie cheese into 4 equal-size pieces. Put the egg into one shallow dish, and the bread crumbs and nuts into another. Dip the cheese into the egg to coat evenly, then into the crumb mixture until completely covered.
Put the gooseberries into a pan with the sugar, ginger and water. Cover and simmer fo r15 mintues until soft. Let cool, then strain into a bowl.
Heat the oil to 350øF, and fry the Brie for 3 to 4 minutes, until golden. Remove with a slotted spoon, and drain on paper towels. Add teh parsley to teh oil, and fry for 1 minute. Remove with a slotted spoon, and drain. Sprinkle with the salt. Place on a serving plate with the Brie, and spoon on the gooseberry sauce. Serve.
