Title: Grape & Stilton Puffs

1/2 | c | Water |
2 | Eggs, beaten | |
FILLING | ||
1 | tb | Butter |
2 | tb | Flour |
2/3 | c | Heavy cream |
1/3 | c | Milk |
1 | c | Crumbled Stilton cheese |
1/2 | c | Green seedless grapes, halved |
Salt and pepper | ||
Grapes, to garnish |
Preheat the oven to 400øF. Sift the flour for the choux pastry into a bowl with the salt. Melt the butter for the choux pastry in a pan with the water. Bring to a boil, and remove from the heat. Add all the flour to the pan, and beat until the mixture is glossy and comes away from the sides. Let cool slightly, then beat in the eggs gradually until the mixture forms a ball.
Put the mixture into a piping bag, and pipe onto a greased baking sheet. Bake for 20 minutes, or until risen and golden. Remove from the oven, and cut a small slit in the side of each puff. Return to the oven for an additional 5 minutes. Remove and let cool completely.
Melt the butter in a pan, and add the flour. Cook for 1 minute. Stir in the cream, milk and Stilton, then cook for an additional 5 minutes. Stir in the grapes, and season well. Split the puffs, and spoon the mixture inside. Serve garnished with grapes.
