Title: Sole & Shrimp Salad

Yield: 4 Servings
1 1/2 | lb | Sole fillet |
2 | c | Shelled small shrimp |
1 | Mango, peeled | |
1/4 | c | Gherkins, halved lengthwise |
2 | tb | Green stuffed olives, halved |
2" piece cucumber, cut into strips | ||
1 | tb | Chopped fresh dill |
1 | c | Radicchio |
2 | ts | Sesame seeds |
DRESSING | ||
4 | tb | Sesame oil |
2 | tb | Lemon juice |

Put the sole into a pan, cover with water, and poach for 7 minutes. Remove from the pan, and skin. Let cool, then cut the flesh into strips. Put the fish into a bowl with the shrimp.
Dice the mango flesh, an add to the bowl with the gherkins, olives, cucumber and dill. Arrange the radicchio in a bowl, and spoon on the fish mixture. Sprinkle on the sesame seeds.
Put all the dressing ingredients into a screw-top jar, and shake well. Pour over the salad, and serve.
