Title: Sweet Carrot Raisin & Nut Bread

Yield: 1 Lge loaf
2 1/4 | ts | Active dry yeast |
2 1/4 | c | Bread flour |
3/4 | c | Rye flour |
1/4 | c | Sugar, PLUS 2 tablespoons |
1 1/2 | ts | Salt |
1 1/2 | ts | Ground ginger |
1 1/2 | ts | Ground cinnamon |
3 | tb | Vegetable oil |
1 | Egg | |
2 1/4 | c | Carrots, finely chopped or |
Grated | ||
1/3 | c | Water |
1/3 | c | Raisins |
1/3 | c | Chopped walnuts |
Add all ingredients except the raisins and walnuts in the order suggested by your abm manual and process on the basic bread cycle.
At the beeper (or a few minutes before the end of the kneading cycle), add the raisins and nuts.
