Title: Jo Parodi's Friend Tony's Crab Cakes

Yield: 8 Servings
2 | c | Crab meat; finely shredded |
2 | Eggs; beaten | |
1/2 | ts | Salt |
1/2 | ts | Pepper |
2 | tb | Mayonnaise |
1 | tb | Mustard; prepared |
1 | tb | Parsley; chopped |
1 | sl | Bread, stale and soaked in |
1 | c | -water, cold and then squeezed dry |
1 | c | Cracker crumbs |
Oil for frying |
Combine all ingredients except the cracker crumbs together and mix thoroughly. Form into eight cakes. Dip each cake into one beaten egg and then dip into cracker crumbs. Brown in hot oil 3/4 inch deep. Drain on paper towel and serve.
These are good both hot or cold.
