Title: Chili Paste
Categories: Peppers
Yield: 1 Batch
Buy 1/2 lb dried Ancho chiles. De-seed and de-stem them. Soak them in enough hot water to cover them. Put chiles and water in blender. Add to taste: Oregano (1 tsp?) Basil (1 tsp?) Cilantro (1/4 tsp?) Garlic (3-4 cloves?) Cumin (1/2 tsp?) 2-4 jalapinos Habeneros to tolerance
Now Liquify this. Then use your preferred chile recipe. The above mix will be good for about 5 lbs of meat. If you like other flavorings, put them in. Unlike the Texicans, I believe that Chile is a developing organism. Even beans are ok with me. And Allspice, properly applied, can add to the flavor. But I did accidently add Cinnamon once...GAAK!!!
