Title: Spicy Migas
Categories: Spice Tex Egg Cheese
Yield: 1 Servings

4tbButter
1/2 Chopped yellow onion
1/2 Chopped green pepper
2 Jalapeno chiles, diced fine
1 Tomato, seeded, diced
8 Well beaten eggs
4 Corn tortillas, cut in
  Strips, and fried, or use
  Tortilla chips
1cChedder cheese
1cSalsa

Melt butter in large saute pan, add onion and green pepper and cook about 5 min or until onions are translucent. Add jalapenos, tomato and eggs, scramble until eggs start to set. Stir in tortilla strips.

Serve topped with cheese; serve the salsa (and flour tortillas and refritos if desired) on the side.
