Title: Spicy Migas

Yield: 1 Servings
4 | tb | Butter |
1/2 | Chopped yellow onion | |
1/2 | Chopped green pepper | |
2 | Jalapeno chiles, diced fine | |
1 | Tomato, seeded, diced | |
8 | Well beaten eggs | |
4 | Corn tortillas, cut in | |
Strips, and fried, or use | ||
Tortilla chips | ||
1 | c | Chedder cheese |
1 | c | Salsa |
Melt butter in large saute pan, add onion and green pepper and cook about 5 min or until onions are translucent. Add jalapenos, tomato and eggs, scramble until eggs start to set. Stir in tortilla strips.
Serve topped with cheese; serve the salsa (and flour tortillas and refritos if desired) on the side.
