Title: Fried Rice (Neysa)

4 | c | Cooked rice |
4 | tb | Oil |
1 1/2 | c | Meat* |
1 | Can Bean Sprouts | |
3/4 | c | Chopped green onions |
1 | ts | Salt |
1/4 | ts | Black pepper |
2 | Eggs, beaten | |
2 | tb | Soy sauce |
1 1/2 | c | Sliced fresh mushrooms |
Cook rice day before and refrigerate.
Heat oil in deep skillet. Cook rice until lightly browned, stirring and pressing lumps out steadily. (Do not use instant rice.)
Add mushrooms and cook for two minutes. Add sprouts, meat, onions, salt and pepper and cook 1 minute stirring constantly. Scrape rice to sides and pour scrambled eggs in center, stir them until they set and then mix in with the rice mix. Add soy sauce.
Note: Cooked shrimp, lobster or julienned pork chicken or beef may be used.
