Title: Ginger Soy Sauce Beef

Yield: 4 Servings
2 | tb | Peanut or corn oil |
2 | Slices fresh ginger root | |
1 | Scallion, cut into 2" pieces | |
1 | lb | Boneless beef, cubed |
2 | tb | Sherry |
1/4 | c | Soy sauce |
1 | tb | Sugar |
1 | c | Water |
Heat the oil over high heat in a saucepan with the ginger and scallion. Add the beef and cook, stirring, until the beef is lightly browned. Add the sherry, soy sauce and sugar. Cook stirring, five minutes. Add the water, cover and cook over medium heat thirty minutes, stirring occasionally. Continue cooking 30 minutes longer.
