Title: Stir Fried Crab and Mushrooms

1 | Can (6 or 8 oz) crabmeat | |
Liquid from can | ||
1/2 | c | Small button mushrooms |
2 1/2 | tb | Oil |
1/4 | ts | Salt |
1 | cl | Crushed garlic |
1 | Scallion, minced | |
1 | tb | Sherry |
1 | tb | Cornstarch, dissolved in |
4 | tb | Water |
Drain canned crabmeat and save liquid. Pick crabmeat with a fork and remove cartilage. Wash and trim mushrooms, leaving whole if small or cutting in half if large. Heat 1 1/2 T. oil in wok. Add salt and garlic and stir fry for 1 minutes. Discard garlic and add mushrooms and scallion. Stir fry for about 3 minutes. Remove from pan. Heat remaining oil, add crabmeat and stir fry for 1 minute or enough to heat through. Return mushrooms and scallion to the wok, stir in the carnstarch mixture until thick and serve immediately.
