Shantung and Peking dishes, from northern China, are closely related. This is due to the active trade that has existed in that region and the resultant "borrowing" of dishes and "exchanging" of chefs. Northern cooking features garlic and scallions extensively, and is also well known for its use of wheat as a staple rather than rice. Peking duck and the pancakes served with mu shu dishes are from the North as well.
