Title: One Pot Chocolate Banana Cake

1/4 | lb | Butter - Plus extra for pan |
2 | oz | Unsweetened chocolate |
2 | VERY Ripe bananas | |
1 | c | Sugar |
1 | ts | Vanilla |
2 | Eggs | |
1/2 | ts | Baking soda |
1 | c | Flour, plus extra for pan |
Preheat oven to 350 degrees.
In a large heavy saucepan over medium heat, begin to melt the butter. When it is half melted, stir in the chocolate. Remove pan from the heat and stir until everything is melted.
Add the bananas, mashing them with th back of a fork until mostly incorporated.
Stir in sugar, vanilla and eggs. Add baking soda in pinches, breaking up any lumps with your fingers. Stir in thoroughly. Then stir in the flour, just until blended.
Pour into a greased and floured 8 inch layer pan and bake for 35 to 40 minutes, until a tester inserted in the center comes out clean. Cool in the pan on a rack for 10 minutes.
