Title: Mustard Mayonnaise (Victorian Recipe)

Yield: 1 -1/4 cups
1 | tb | Red wine vinegar |
2 | ts | Grainy mustard |
1 | c | Olive oil |
1 | lg | Egg |
1-2 cloves garlic | ||
Salt & pepper to taste |
Place vinegar, egg, mustard, garlic, salt and pepper in food processor or blender. (Funny, but I don't think they had these in the Victorian Era ;) bet they used an old fashioned egg beater.) With machine running, slowly pour in oil until the mayonnaise is the thickness of whipped cream.
