Title: Tomato and Thyme Butter

1 | lb | Butter, softened |
1 | tb | Shallots, minced |
1 | tb | Garlic, minced |
6 | oz | Sun-dried tomatoes packed in |
Oil, drained and diced | ||
1/2 | ts | Fresh thyme, chopped |
1 1/2 | ts | Dried thyme leaves |
1 | tb | PLUS |
1 | ts | Fresh lemon juice |
In a mixing bowl, whip softened butter for about 5 minutes using an electric mixer. Fold in the shallots, garlic, sun-dried tomatoes, fresh thyme, dried thyme, and lemon juice.
Whip for 1 minute. Store in refrigerator until needed.
Makes 1 pound.
