Title: Tomato and Thyme Butter

1lbButter, softened
1tbShallots, minced
1tbGarlic, minced
6ozSun-dried tomatoes packed in
  Oil, drained and diced
1/2tsFresh thyme, chopped
1 1/2tsDried thyme leaves
1tbPLUS
1tsFresh lemon juice

In a mixing bowl, whip softened butter for about 5 minutes using an electric mixer. Fold in the shallots, garlic, sun-dried tomatoes, fresh thyme, dried thyme, and lemon juice.

Whip for 1 minute. Store in refrigerator until needed.

Makes 1 pound.
