Title: Egg White Bar Cookies

2 | c | Flour |
2 | ts | Baking powder |
1 | pk | Light brown sugar; (1 lb) |
1/2 | ts | Salt |
2 | ts | Vanilla extract |
1 | c | Egg whites |
1 | c | Raisins |
Nonstick cooking spray | ||
Confectioners' sugar |
Preheat oven to 350øF. Pour flour, baking powder, sugar, salt, vanilla and egg whites into mixer bowl. Beat at medium speed for 4 minutes. Stir in raisins. Spread in lOxl5-inch jelly roll pan that has been sprayed with nonstick cooking spray. Bake for 20 to 25 minutes or until an even golden brown. Cool completely before cutting into bars. Shake bars, a few at a time, in a bag of confectioners' sugar to coat completely.
Makes 5 to 6 dozen, depending on size. They freeze well.
Notes: Vary recipe by using chopped dates or snipped dried apricots in place of raisins. Add a dash of cinnamon or nutmeg. If you feel the need to add fat to these bars, try a cup of chopped nuts or coconut.
