Title: Mocha Truffle Cookies

1/2 | c | Margarine or butter |
1 1/2 | c | Semisweet chocolate pieces; |

1 | tb | Instant coffee crystals |
3/4 | c | Granulated sugar |
3/4 | c | Brown sugar; packed |
2 | Eggs | |
2 | ts | Vanilla |
2 | c | Flour; all-purpose |
1/3 | c | Unsweetened cocoa powder |
1/2 | ts | Baking powder |
1/4 | ts | Salt |
Preheat the oven to 350øF.
In a large saucepan melt the margarine or butter and 1/2 cup chocolate pieces over low heat. Remove from the heat. Stir in the coffee crystals; cool for 5 minutes. Stir in the sugars, eggs and vanilla.
In a medium mixing bowl combine flour, cocoa powder, baking powder and salt. Stir into coffee mixture. Stir in the remaining 1 cup of chocolate pieces. Drop dough by rounded Tbsp onto lightly greased cookie sheets. Bake for 10 minutes. Let cool for 1 minute before removing from sheets.
Makes about 30 cookies.
