4 | c | Self-rising flour |
1/2 | c | Butter |
1 | c | Milk |
TOPPING | ||
1 1/4 | c | Chopped cooked chicken |
1 | Green bell pepper, seeded and sliced | |
1/4 | c | Canned corn, drained |
3/4 | c | Peeled, cored and diced fresh pineapple |
1 | Banana, thinly sliced | |
2 | oz | Mozzarella cheese, sliced |
SAUCE | ||
1 | tb | Butter |
2 | tb | Flour |
1 | c | Milk |
1/4 | c | Freshly grated cheddar cheese |
1 | tb | Chopped fresh tarragon |
Salt and pepper |
To make the dough, sift the flour and a pinch of salt into a bowl. Rub in the butter until the mixture resembles bread crumbs. Make a well in the center, then add the milk and bring together to form a smooth dough. Roll out into an 8" round on a lightly floured surface. Place on a greased baking sheet.
Preheat the oven to 400øF. Melt the butter for the sauce, then add the flour and cook for 1 minute. Stir in the milk, cheese and tarragon. Season and bring to a boil, stirring constantly. Spoon onto the pizza base. Top with the remaining ingredients, and bake for 30 minutes, or until the cheese has melted. Serve with a green salad.
