Title: Guacamole Con Tomatillos

Yield: 2 Cups
4 | TO 5 fresh or canned | |
Tomatillos | ||
3 | Canned green chilies, seeded | |
*OR* | ||
1 | Serrano or jalapeno pepper | |
IF hotter sauce is wanted | ||
2 | lg | Ripe avocados |
1 | tb | Minced onion |
ds | Salt to taste | |
ds | Pepper to taste | |
OPTIONAL GARNISH | ||
1/4 | c | Cilantro leaves, minced |
If using fresh tomatillos, discard husks and wash. Boil in a small amount of water until just tender, about 5 minutes, drain.
If using one of the hotter fresh chilies, discard stem and seeds.
Combine tomatillos and chilies in a blender and blend until smooth.
Halve the avocado and remove seed. Scoop out pulp and mash with a fork. Stir in tomatillo mixture with onions. Add salt and pepper to taste. Garnish with cilantro if desired.
