Title: Ginger-Banana Chutney for Chutney Burgers

1/2 | c | Banana, mashed |
1/3 | c | Onion, chopped |
1/3 | c | Dates, dried, chopped |
1/3 | c | Pineapple juice |
1/4 | c | Currants, dried |
1/4 | c | Cider vinegar |
3 | tb | Pickled ginger, minced |
1/2 | ts | Curry powder |
Combine all ingredients in 1 to 2 quart pan, simmer, stirring often until chutney has the consistency of thick jam, about 30 minutes. Use warm or cool. If making chutney ahead, cool, cover, and chill for up to 3 days.
