Title: Samsadas De Quezo (Cheese Triangles)

1 | lb | Feta cheese, well mashed |
1 | lb | Farmer cheese |
4 | lg | Eggs, beaten |
2 | tb | Bread crumbs or matzoh meal |

Samsadas make admirable appetizers or luncheon items. They may be frozen. To reheat, remove from the freezer & allow to remain at room temp for 1 hr. Then warm in preheated 350F oven for 10 mins to renew crispness.
1. Mix cheeses, eggs, & bread crumbs or matzoh meal together well. Set aside. This is filling. 2. Take 1 fillo sheet & cut down center into halves. Fold 1/2 together in 3 equal lengths, which leaves half of sheet abt 2-1/2 inches wide. 3. Put 1 tb filling on bottom of folded sheet & fold it up to right edge, then to left edge, back & forth, until you reach top of sheet, making a triangle w/each fold. Make certain that fillo covers cheese filling. Repeat process w/other sheets. Paint each triangle w/beaten egg/water mixture. 4. Bake in a preheated 350F oven for 30 to 40 mins, or until triangles are brown. Serve warm. Makes abt 15 triangles.
